Bruschetta Mix
Traditional Tomato Topping
3 tomatoes, diced
1 tsp salt
¼ cup fresh basil leaves, chopped
½ tsp chopped garlic
3 Tbsp olive oil
pinch black pepper
1 loaf french bread, sliced in ½ inch thick rounds
½ cup good olive oil
Mixed Vegetable Topping
1 pkg mushrooms, diced
1 red onion, diced
1 green pepper, diced
1 tsp salt
½ tsp chopped garlic
3 Tbsp olive oil
Pinch black pepper
¼ tsp fresh or dry thyme
Shredded Parmesan cheese
Mix the tomato mixture together at least two hours ahead of serving.
Saute the mushrooms, red onions, garlic, green pepper, and spices together until the vegetables are tender-crisp and all water has evaporated. Serve on top of grilled french bread.
