Watermelon with Ginger, Lime, Mint
This is a nice refreshing dessert or appetizer on toothpicks, or a terrific salad all in one!
½ watermelon, cut into balls (can use chunks) about 4 cups
1 cantaloupe, cut into balls (can use chunks) about 4 cups
1 Tablespoon grated ginger
1 heaping tablespoon chopped fresh mint
Juice of 1 lime
¼ cup (or to taste) sugar, honey, or agave syrup
1 recipe cream sauce (see below)
Mix watermelon and cantaloupe together gently.
Add the ginger, mint, juice, and sugar.
Let chill in refrigerator for no more than four hours.
Serve on toothpicks with the dipping sauce or present in a bowl with the sauce on the side.
Cream Sauce
1 cup Greek or regular yogurt, sour cream, lite sour cream, light cream, or heavy whipping cream
Rind from one lime
Juice of one lime
Sugar to taste (about 2 Tbsp)
Mix all ingredients together and let chill for at least 1 hour
