Fresh Coleslaw

 

1 large head green cabbage

1 small piece fresh onion, peeled

1 carrot

1 cup mayonnaise or lite mayonnaise

¼ cup cider or other sweet vinegar

¼ cup sugar

1 Tbsp prepared mustard or 1 tsp dried mustard

1 tsp salt and more to taste

½ tsp pepper

 

Using a food processor or by hand, grate the cabbage, the onion, and the carrot

Add the salt and pepper and let the cabbage sit and sweat- it should become moist

 

Mix the mayonnaise, vinegar, sugar, and the mustard.  Add the pepper


Mix the dressing with the salted cabbage and taste for more salt.

 

Chill for at least 1 hour in the refrigerator.
