Three Onion Soup

 

2 lbs onions, sliced

1 bunch leeks, sliced

1 bunch scallions or green onions, sliced, green included

3 Tbsp butter

1 tsp sugar

2 cloves garlic, pressed or smashed

10 cups good beef broth or beef broth mixed with chicken broth

2 bay leaves

˝ tsp thyme

˝ tsp black pepper

2 cups dry white or red wine

 

12 slices French baguette

2 cups grated swiss or gruyere cheese

˝ cup shredded parmesan or romano cheese

 

·         Sauté onions in butter and sugar until dark golden brown

·         Add garlic and sauté for one more minute

·         Add beef broth, bay leaves, thyme, pepper, and wine and simmer for 30 minutes

·         While soup is simmering, toast the French bread on both sides

·         Right before serving, pile the shredded cheese on all of the French bread pieces

·         Broil the cheese on top of the bread

·         Keep warm while soup is ladled into bowls

·         Top with the cheesy bread slices

·         Serve bubbly hot

 

If desired, put the bread directly on the soup, top with bread then cheese and broil the whole bowl of soup in the broiler until cheese is bubbly hot
