Mole Poblano  - Tamale Filling

 

½ cup diced or ground tomatoes

4 oz can drained green chilis

2 Tbsp raisins

1 Tbsp flour

½ tsp ground cinnamon

¼ tsp pepper

1/8 tsp anise seed

1/8 tsp ground cloves

2 cups Chicken broth

3 tbsp oil

1 medium onion, diced

½ tsp garlic, chopped

1 lb. Boneless, skinless chicken, cut into small dice

2 Tbsp cocoa powder

 

 

·       In large skillet sauté onion and garlic in oil

·       Add chicken pieces to skillet and brown on all sides

·       Blend in blender the tomatoes, chilies, raisins, flour, cinnamon, pepper, anise seed, cloves, and broth

·       Add the seasoned broth to the chicken mixture

·       Add cocoa powder

·       Bring to a boil

·       Reduce heat, cover, and simmer until chicken is tender, about 10 minutes

·       Place in a covered container and keep until tamales are made
