Made-Over Mashed Potato Waffles

 

2 eggs

2½ cups buttermilk

½ cup sugar

½ cup melted butter

2 cups leftover mashed potatoes

1½ cups shredded cheddar cheese

2 tsp garlic powder

1 tsp poultry seasoning (optional)

1 Tbsp baking powder

2 tsp baking soda

2½ cups flour

 

Heat a waffle maker according to the manufacturer's directions. 

 

Mix the eggs, buttermilk, sugar, and butter together.  Add the leftover mashed potatoes, cheddar cheese, garlic powder, and poultry seasoning, if desired.

 

Using a wire whisk, mix thoroughly so that all of the potatoes are incorporated well.

 

Mix the dry ingredients together and fold into the liquid/potato mixture.

 

Spoon the batter into the waffle maker following the manufacturer directions

 

Bake in the waffle maker until a deep golden brown.  Do not underbake

 

Remove the waffles and place on a plate without stacking.

 

May be reheated in a toaster or in a 350 degree oven for 10 minutes.
