Jewish Oil Cake

 

2 cups sugar

¼ cup orange juice

1 cup oil (canola is good)

2½ tsp vanilla

4 eggs

1 cup chopped nuts

3 cups flour

3 tsp baking powder

½ tsp salt

 

Filling:

 

2 cups thinly sliced apples

1 tsp cinnamon

3 tsp sugar

 

 

1.      Preheat oven to 350 degrees. 

2.      Beat sugar, eggs, oil, juice, and vanilla at high speed for 10 minutes with electric mixer

3.      Mix dry ingredients together and blend into liquids a little at a time.

4.      Pour 1/3 of the batter into well-greased Bundt pan.

5.      Arrange 1 cup sliced apples, ½ cup nuts, 1½ teaspoon sugar, and ½ teaspoon cinnamon over the batter in the pan.

6.      Add another 1/3 of the batter, layering again and finishing with remaining batter.

7.      Bake at 350 degrees for 1 hour 15 minutes. Cool and sprinkle with powdered sugar to serve.
