Potato Latkes

 

3 large potatoes, grated and not peeled

1-2 Tbsp lemon juice

½ large onion, grated

2 eggs, lightly beaten

¼ cup flour

½ tsp baking powder

¾ tsp salt

dash of pepper

Oil for frying

 

1.    Scrub the potatoes with a vegetable brush

2.    Grate the scrubbed potatoes into a bowl and add lemon juice, mixing as you add more potatoes

3.    Grate the onions and add these to the potatoes

4.    Mix in all of the rest of the ingredients until the flour is all mixed in and all of the ingredients are evenly coated

5.    Heat 2 Tbsp oil in a large non-stick skillet on medium heat

6.    Add ¼ cup of the mixture into the pan for each pancake- using the back of the spoon to spread to about 3½ inches diameter

7.    Let the latke brown on one side before turning it—the edges should look browned and dry and you can peek underneath after the latke congeals

8.    Flip the latke over and continue to cook on the other side

9.    Get a plate and put paper towels on the plate to absorb the grease

10. When the latkes are done, place on paper towels to drain and then place in a glass pan in the oven to keep warm while the rest of the latkes cook.

11. Serve the latkes with either fruit, sour cream, or applesauce
